Ingredients:

  • 2 slices sourdough bread (replace with rice cakes for GF option)

  • 2 large hard-boiled eggs

  • ½ medium avocado

  • ¼ cup low-fat cottage cheese

  • 1 tsp lemon juice (optional)

  • Salt & pepper

  • Chili flakes (optional) – pinch

  • Toppings (optional): herbs (e.g., cilantro) or micro greens


Instructions

  1. Boil the eggs

    • Place eggs in boiling water and cook for 9–10 minutes.

    • Transfer to cold water, peel once cool, and slice.

  2. Make the mash

    • In a bowl, mash ½ avocado with ¼ cup cottage cheese.

    • Mix in lemon juice, salt, pepper, and chili flakes if using.

    • Stir until combined but still a bit chunky.

  3. Toast the bread

    • Toast the sourdough slices until golden and crisp.

  4. Assemble your toast

    • Spread the avocado-cottage cheese mash on the toast.

    • Top with sliced eggs.

    • Season with extra salt, pepper, or chili flakes as desired.
