Ingredients:
2 slices sourdough bread (replace with rice cakes for GF option)
2 large hard-boiled eggs
½ medium avocado
¼ cup low-fat cottage cheese
1 tsp lemon juice (optional)
Salt & pepper
Chili flakes (optional) – pinch
Toppings (optional): herbs (e.g., cilantro) or micro greens
Instructions
Boil the eggs
Place eggs in boiling water and cook for 9–10 minutes.
Transfer to cold water, peel once cool, and slice.
Make the mash
In a bowl, mash ½ avocado with ¼ cup cottage cheese.
Mix in lemon juice, salt, pepper, and chili flakes if using.
Stir until combined but still a bit chunky.
Toast the bread
Toast the sourdough slices until golden and crisp.
Assemble your toast
Spread the avocado-cottage cheese mash on the toast.
Top with sliced eggs.
Season with extra salt, pepper, or chili flakes as desired.
