Creamy Cozy Oatmeal (GF, V)

Ingredients:

  • ½ cup rolled oats

  • 1 cup milk (dairy or non-dairy like oat, almond, soy)

  • ½ cup water

  • 1 tbsp nut butter (peanut, almond, etc.)

  • ½ tsp cinnamon

  • Pinch of salt

  • 1 small ripe banana, mashed  –or–  ½ cup fresh or frozen berries

  • Optional: 1–2 tsp maple syrup or honey, to taste


Instructions:

  1. Combine oats and liquids:
    In a small saucepan over medium heat, combine the oats, milk, water, cinnamon, and salt.

  2. Add your fruit:
    Stir in either the mashed banana or the berries (no need to thaw if frozen).

  3. Simmer:
    Cook for 5–10 minutes, stirring often, until the oats are creamy and the fruit is blended in.

  4. Finish with nut butter:
    Stir in the nut butter for a rich, creamy texture.

  5. Sweeten if needed:
    Taste and add a little maple syrup or honey if you like it sweeter.

  6. Serve warm:
    Top with a splash of milk, extra fruit, or a sprinkle of nuts if desired.
